Hello you lovely souls. I’m seated in an attractive, cozy ruler bed writing for you from Hilton Head Health , a fitness and wellness holiday resort in Hilton Mind, SC. Earlier this week has been so refreshing for me personally in more methods than I can fathom to create about. My goodness is it possible to believe AK has been cooking for a little over three years? I’ve created here about my entire life experiences, career changes, moving, romantic relationships, friendships and my ever developing obsession with Zac Efron.
What I haven’t included is my true and constant struggle with food; certainly it is the like of my life (questionable due to Tony). I don’t want this post to become overweight, but do wish you to know that this blog changes and grow, just like any individual does. So when any relationship goes, I hope we’re with this together; that you’ll still get to AK to make my recipes simply because they certainly are not really going away. I’ll just be composing more concerning this trip I’m on.

But more than enough serious business. Let’s get onto the snacks I baked for you personally today! Flourless Pumpkin Almond Butter Bars. I know, best? With dark chocolate as well as perhaps some coconut if you elegant it (you SO fancyyy).
I’m so happy that these bars cooked up so delightfully and full of pumpkin flavor. I had been afraid the almond butter would come through an excessive amount of, but it works out that these satisfy a pumpkin craving like no various other.
What I’m especially excited about is the wonderful nourishment in these bars. Plenty of vitamins plus antioxidants (from dark chocolate) taking place. They’re also gluten free of charge, low carb, dairy products free of charge, paleo and grain free of charge. I’m fairly particular you could easily veganize them by adding a flax egg (1 T surface flax seed + 3 tablespoons water). I love enjoying mine in the afternoon with a big sit down elsewhere.
To serve them as a dessert, I would recommend topping them away with a little coconut whipped cream or homemade almond butter smeared over the top having a sprinkle of ocean salt. Just trust me on this one men; sweet and salty is definitely the answer.

1/2 cup pumpkin puree
1 egg
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your favorite dark chocolate club (a minimum of 70% cocoa), coarsely chopped
Preheat oven to 350 degrees F. Spray an 8×8 inch baking skillet with nonstick cooking food spray.
In a big bowl, whisk collectively all ingredients except coconut and dark chocolate. Once ingredients are well combined, fold in 1/4 glass of the coconut flakes and all of the dark chocolate.
Pour into prepared skillet and sprinkle the rest of the coconut flakes on top. Bake for 20 a few minutes or until slightly golden brown on the edges. Place pan on wire rack to great. Once cool, trim into 16 squares. Enjoy!

TO MAKE VEGAN: Use a flax egg to displace the egg.
If you omit the coconut and chocolates, each club (based on 16 pubs) is around 67 calorie consumption.
If you just leave out the coconut, the bars will be a little under 100 calories.
Instead of almond butter, you should use another natural nut butter of your decision. I don’t recommend sunflower seed butter. Peanut butter will be delicious!
