Ingredients
1/2 cup almond or peanut butter
1 cup gluten free rolled oats
1/3 cup vegan chocolate chips (I love the TAKE IT EASY Mini Chocolate Chips)
Optional: 1/4 teaspoon vanilla extract
Instructions
In the bowl of a food processor, add pitted dates and practice until a date paste forms. Next add in almond butter and vanilla if using and process again until well mixed. Transfer mixture to a bowl then flip in oats and delicious chocolate chips; you may need to use the hands to get it well incoporated. Please be aware that this dough will become extremely sticky, but that’s okay
Move the dough right into a tiny bit smaller than 2 inch balls and place on parchment paper or plastic material wrap. Freeze for quarter-hour or refrigerate for 30 minutes to help set the bites. Makes about 14 bites. Store in refrigerator for 2 weeks.
