Hi guys! I am hoping your weekend was totally fabulous.

I’m excited and kinda also freaking out concerning this week. I’m planning for the big proceed to Chicago; but possess I informed you that I’m the complete worst at packing? I’m serious! Anytime I go on a trip, I usually pack the morning hours of or late the night time before. It’s absurd really. This weekend my mother came over to help me pack, while I spent most of my period cleaning up my closet attempting to figure out if I should get rid of some of my clothing, shoes and purses. And it’s like all I want to do is prevent packing by baking more or buying myself silly on the web. Oops.
The exciting part about this week is that I’m going to Kansas City for Chopped Con , a food blogging conference. My pal Maegan and I will stay the weekend and explore every one of the delicious bakeries and restaurants in KC, so if you have any recommendations I’d want to hear them!
Anyway I understand I’m going to need major energy for all the walking we’ll do in KC normally I’ll come on HANGRY. I swear easily don’t consume every 3 hours, I obtain severe road rage, can’t believe and essentially am not really a functioning human being. Please state I’m not the only person with uncontrollable hunger rage.
A genuine solution is to always have snacks on hand. Fruit, bars in the fridge, granola, nut products. Anything, really!
These little energy bites are a new favorite. They finally got dates at Investor Joe’s and I knew I needed some recipe screening to do. What came out of my experiment may be the most marvelous small bite ever. I’ve constantly pondered why people like dates a lot and now I truly understand their magic.
Yes they are gluten free, vegan, no sugar added (without the delicious chocolate chips) small morsels that taste like chocolate chip cookie dough. I swear it! The best part? They’re just 4 ingredients and SO easy to make. I used to be snacking in it in about a quarter-hour. Another perk is certainly you could totally customize them by adding different taste combos.
Keep these in the fridge or consider them to work for easy snacking. You can even make these into bars rather than balls and individually wrap them in plastic material wrap for later on. I enjoyed the bar version however the bites are just too dang lovely. Plus, it also kinda feels as though you’re eating a big scoop of cookie dough. Additional options to try with these is definitely adding coconut, dried fruit or different kinds of chocolate chips. It’s up to you!
Enjoy! xo
