How was your weekend?

Of course… mine was delicious! I took the day off Fri to spend period with my mom; we had a great lunch at Panera and got pedis. I QUICKLY spent the greater area of the afternoon getting organized in preparation for a move. I’ve come to the conclusion that will hardly ever like packing points or getting rid of clothes.
On Saturday I needed a fun date night at Borough in Minneapolis (more to seriously that another period).
Last night was Mother’s Day time; my children celebrated using a light brunch plus they also pressured me to make my greatest apple crisp Afterwards I acquired in a beautiful 6 mile run, after that dabbled in the kitchen a little with some cooking. Some days there’s nothing better than carrying out just what your passionate about, you know? Grocery store runs, arranging my quality recipes, and photographing the outcome makes me feel a bit accomplished.
But merging beloved chocolates and breads? That’s also an fulfillment in my brain.
Then again, I have a pretty weird brain.
Grilled cheese is major. So major that the complete month of April was National Grilled Parmesan cheese month. And it’s May now. Once again, I fail at following crowd.
I will admit which i sort of LOVED this sandwich! Which amazed me, because I’ve never been one of those folks who was obsessed with grilled cheese growing up. I totally recognize that it’s a comfort and ease food, but I always preferred mac and cheese. Or a plate of Cheerios. (Seriously, WHY IS CEREAL SO GOOD?)
This grilled cheese has unexpected flavors, and pigs feet stock perhaps that is why it’s so completely incredible. Lovely, tart raspberries combined with creamy brie and dark chocolate sandwiched between hearty multigrain breads. It’s like taking a big bite of heaven.
Who could resist?
Let me place it in this manner: This is not your general grilled cheese. It is the grilled parmesan cheese you serve at a party. Or the grilled parmesan cheese you make for the man you’re dating. It’s outrageous and crazy in an extremely good way.

2 tablespoons butter
2 ounces your favorite good-quality dark chocolate, damaged into pieces
½ cup smashed raspberries (about ¼ pint)
Spread butter on one side of every slice of breads.
Slice the brie and spread on unbuttered sides of the bread. Add smashed raspberries and damaged pieces of chocolates, top with staying slices of buttered breads.
Heat a skillet over medium high heat and add sandwiches. Cover with a lid and cook about five minutes, or until fantastic brown on bottom.
Properly flip sandwich, reduce heat to medium and cook a few more minutes or before chocolate and cheese have melted and bread is fantastic brown. Enjoy sandwiches immediately!
