I’m headed back to Australia!

During college, I analyzed abroad in the Gold Coast and it literally transformed my entire life. I’m uncertain if it was the travel element or meeting brand-new people, but I felt like a new person after living there. Primarily, I felt therefore lucky to meet one of my best friends, Susie.
Susie and I strike it off immediately; it’s as if we had been sisters, I swear! We fulfilled in a public speaking program at Bond University or college and instantly clicked. Our day to day ritual consisted of drinking soy lattes, eating white delicious chocolate chip macadamia nut muffins, and laughing non-stop. We supported one another, shared secrets, and talked about what we wanted to do whenever we graduated from college. Of course, both of us had big dreams: Susie wanted to be considered a reporter or even a pilot (she today flies a little private jet), and I needed to own my very own business (check!). Now it’s been almost four years since I’ve seen Susie, but our companionship hasn’t transformed one bit.
Well, aside from the fact that she’s getting married! And best of all, I’m beyond thrilled that she asked me to become her Maid of Honor! I won’t be there to greatly help her program lots of the details, but we will Skype and I’ll do whenever you can from America! She deserves this pleasure a lot more than anything.
But you deserve happiness, too! And during the holidays, there is nothing much better than a warm cookie to help provide some cheer!
These cookies produce me extremely happy because all you have to is 6 ingredients: peanut butter, honey, vanilla, eggs, cooking soda, and your favorite chocolates bar! EM JEEZY.
The trick to making these cookies EXTRA special is the delicious chocolate bar you select. I’ve sort of been enthusiastic about artisan chocolate bars lately. Obsessed means I go to Entire Foods and stare at them for a good 20 mins before they begin requesting me if I’m searching for something specific.

Whatever delicious chocolate you end up choosing, ensure that it’s your fav. Heck, you can also chop up peanut butter mugs and fold them set for a double PB chocolate combo. In the event that you aren’t into delicious chocolate, try coconut, oats, cranberries, or your favorite candy bar… it’s your decision!
If you want a hearty cookie having a bit of chew, just fold in ¾ cup of oats to the dough. Just a little sprinkle of sea salt also makes these shine. In any manner you do it, you won’t be disappointed. Happy baking!

1/2 cup honey
2 teaspoons vanilla
½ teaspoon baking soda
Preheat oven to 350 levels.
In a big bowl, combine peanut butter, honey, vanilla, eggs and baking soda pop until smooth and well combined. Carefully fold in cut chocolate.
Move cookies into 2-inch dough balls and place onto cookie sheet 2 inches apart. After that BARELY flatten the top of every cookie together with your hand. The dough will be sticky, so if you discover this method challenging, simply work with a cookie scoop to drop the cookie dough onto the prepared cooking sheet. The cookies may not be as round in shape and perhaps a little thicker, but that’s okay-they will still be delicious!
Bake cookies for 8-10 minutes and remove when sides barely commence to change a golden dark brown. The cookies may appear just a little underdone, but they will continue steadily to cook when you remove them in the oven. Cool in the cookie sheet for at least 5 minutes; then transfer to some cable rack to cool completely. Repeat with remaining cookie dough.
