You just need a few pantry staples like beans, fresh herbs, garlic, and lemon to outfit it up. I love adding avocado chunks and feta, although those ingredients aren’t pictured right here.
The salad includes a middle-eastern feel but you can combine it up to fit your tastes. It had been inspired with the delicious salad I sometimes will get at Investor Joe’s called ‘Balela’. Give it a try, or just get this to and be pleasantly surprised. It’s been my new favorite healthy lunch time. Although I’ll say that this would also make a great chip dip. Mmmmm.

Middle Eastern Chickpea & Black Bean Salad
1 tablespoon essential olive oil
1/4 cup chopped basil
2 tablespoons chopped parsley
1 – 15 oz can garbanzo coffee beans (chickpeas), rinsed and drained
1 – 15 oz can easily black coffee beans, rinsed and drained
1/2 cup diced red onion
1 pint grape tomatoes (or mini heirloom!), halved
In a moderate bowl, whisk together all dressing ingredients: garlic, lemon juice, essential olive oil, basil, parsley, and honey. Taste and adjust seasonings as required.
In another large dish, toss chickpeas, black beans, red onion, and tomatoes jointly. Pour dressing over and gently toss to mix. Refrigerate thirty minutes before offering to allow flavors to soak in. Sprinkle feta and avocado at the top if desired.
