Whole Wheat Chocolate Chip Oatmeal Cookies with Salted Date Caramel

Ohhhh hiiii. It has been a whirlwind past few weeks due to moving. Personally i think horrible because I haven’t been able to give the blog and writing the think it’s great most certainly deserves.
For now, there’s cookies though. And cookies are constantly the answer when you do not even know what the question is. Especially cookies loaded with chocolates, oats, coconut flavor along with a SALTED Day CARAMEL. Holy like of my entire life.
I seriously cannot cease eating these amazing, chewy beauties. They’re filled with much better ingredients like coconut oil, whole wheat grains, oats, coconut sugars and that chocolates we all know and like. I’m not saying these are healthful, but I am stating that they do offer a few natural, nutritious ingredients.
Also, everything that dark chocolate = antioxidants. Might as well believe that.
Maybe with some PB too? I mean, obviously.

1/2 cup organic brownish sugar
1/4 cup coconut sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 egg, at room temperature
3/4 cup whole wheat grains pastry flour or white whole wheat flour
1 cup rolled oats
1/2 teaspoon cooking soda
1/4 teaspoon salt
6 oz your preferred dark chocolate club (a minimum of 72% cacao), coarsely chopped
For the salted date caramel
8 Medjool times, pitted
1/2 cup unsweetened vanilla almond milk, plus more if necessary
1/2 teaspoon vanilla extract
Preheat oven to 350 levels F.
In a moderate bowl, beat together coconut oil, brown sugar, coconut glucose, vanilla, almond extract and egg until well combined and somewhat creamy.
In a separate medium dish, whisk together flour, oats, baking soda pop and sodium. Add dry elements to wet elements, mixing up until a dough forms. Fold in chocolates chunks.
Roll cookies into 1-inch balls or work with a cookie scoop and put on a large baking sheet, roughly 2 in . apart. Bake for 9-12 minutes or until sides are slightly fantastic brown. Remove cookies from oven and invite to cook on baking sheet for a couple minutes before transferring to a wire rack to complete cooling.
To help make the salted day caramel: Warm-up almond dairy in a little saucepan until it’s nearly too hot to contact (but don’t boil it). Up coming place times, almond milk, vanilla and sodium within the blender and pulse/blend until smooth. You may want to add more almond milk if it’s too thick to mix. Use your best judgement. Try not too add an excessive amount of almond dairy because you don’t want to buy soupy, but instead on the thick side.
Once your caramel is prepared, you can place it in a small plastic ziploc bag and zip it shut. Press the caramel towards one bottom level corner of the bag and snip off a tiny part using a scissors (Congrats, you just produced a DIY pastry bag!). Finally, squeeze caramel over each cookie. You most likely won’t use all of the caramel, so feel free to shop it in the refrigerator for a week. It’s great on toast, in oatmeal or basically on whatever needs a little sweetener, like your coffee. Makes about 14 medium sized cookies. Feel absolve to double the formula!
If you want thicker cookies, add a few tablespoons more of oats.
It’s important that your egg be at room heat otherwise it could seize in the coconut oil. Try taking the egg out of the fridge and placing it at space temp. for approximately 30 minutes before you are ready to start making the cookies.
Feel free to sub 1 cup chocolate chips for the chocolates chunks.

Reduce the sugars (and save calories) within this recipe by using only 3oz of dark chocolate (or around 1/2 cup of chocolate chips). You can even try using raisins!

I usually make my cookies wheat-free as my partner isn’t excellent with wheat and We generally tend to avoid it myself, so will try with an almond flour and sorghum mix! X
