Zucchini Banana Delicious chocolate Chip Muffins are healthy, damp and insanely great tasting! Who would like one?!

Random Fri posts are good sometimes, right? They put in a small jazz among the food porn shots.
Therefore, here we move. I’m telling you 10 random reasons for having me. There’s no rhyme or cause to it!
I actually blew out the audio speakers on my new car after a month. I’m going to proceed deaf. No biggie.
I eat peanut butter from the jar on a regular basis. Don’t even make an effort to judge that there. That’s real life.
My dog is normally nicknamed Oscar de La Renta. He’s happy. I’m going to buy him a red collar quickly. He’ll figure it out.
I have plans to attend culinary college. Someday, somehow! I want to pay off all of my student loans first. Or win the lottery?

I have to confess which i drank near a bottle of wine after my juice cleanse. Do you think that reversed the cleanse? Meh.

That fresh Almond Joy frosting was spooned from the jar last week…. directly into my mouth. It is advisable to find it and do the same.

These zucchini banana muffins? THE BEST MUFFINS EVER! NO SERIOUSLY. EVER.
Remember those zucchini brownies We made the other day? Holy fudge those had been delicious and kind of got me a wee bit enthusiastic about zucchini. I’m sure you might have an abundance of zucchini that should be used up, as well!
Anyway I thought that I would as well put them in muffins… you guys know how very much I really like muffins.
I wonder if the muffin man is hiring an associate? Probs not.
These muffins are incredibly moist from a multitude of healthy ingredients: zucchini, applesauce, banana, greek yogurt and handful of coconut oil.
All of these substitutes help to keep the calories of the muffins in balance which allowed me to add in chocolate chips so they experience a bit indulgent at exactly the same time.
Whenever you bake these, I highly recommend using whole wheat pastry flour. It’s a lighter whole wheat flour that keeps baked goods light and fluffy. If you can’t find it on the store, I suggest using a mix of whole wheat grains and all-purpose.
Enjoy these big, soft healthy muffins. They’re refrigerator friendly and a terrific way to use up zucchini!
Ingredients
1 1/4 teaspoon baking powder
1/2 teaspoon cooking soda
2 small to medium ripe bananas, mashed
1 teaspoon melted coconut oil
1/4 cup honey
1 teaspoon vanilla
2 egg whites
2 tablespoons unsweetened applesauce
1/2 cup mini or regular chocolates chips (I love mini)
Instructions
Preheat oven to 375 levels F. Line 12-cup muffin tin with cupcake liners and generously aerosol inside of liners with nonstick cooking spray.
Press shredded zucchini of surplus water with a paper towel! That is an important stage.
In medium bowl combine flour, baking powder, baking soda, and cinnamon; reserve.
In plate of a power mixer, add mashed banana, oil, honey, vanilla and eggs; combine until smooth. Add in zucchini, applesauce, and yogurt and beat again until well mixed. Slowly combine in dry ingredients until just combined. Remember not to over combine the batter – we want moist muffins! Lightly flip in 1/2 glass of chocolate potato chips.
Equally divide batter into muffin cups. The batter will most likely reach the top of each muffin liner, but that’s alright – we’re producing big muffins! On the other hand you can decrease the size and bake 15 muffins. Bake for 20-25 mins or until toothpick put in to the middle arrives clean. Enjoy!-

I’m really excited to try these! Do you think it would make any difference in structure if I removed the delicious chocolate? I am more of a enthusiast of nuts than chocolate in my breakfast baked items and was thinking of subbing in walnuts?

One issue I ran across was that the muffins stuck towards the paper- even though I actually sprayed the mugs. Next time I’ll make use of foil liners.
But really great tasting- a worthwhile treat!

I would imagine substituting chocolate with berries would be equally as good.
